The sicilian cucumber is mainly made of water, for 90% accuracy. It also contains vitamin A and C, important for many functions including to strengthen and maintain healthy skin, hair and mucosa, protect from infections lungs, increase immune defenses and are strong allies against stress. In addition, they contain a good amount of mineral salts such as potassium, sodium, calcium and phosphorus. They have very few calories, in fact they are ideal for hypocaloric and hypoglycemic diets (each 100 g cucumber contains only 13 calories). Cucumber in salad

Ingredients:

  • rocket
  • 2 cucumbers
  • 1 carrot
  • 10 cherry tomatoes
  • 1 tablespoon extra virgin olive oil
  • green olives
  • tuna or mackerel
  • apple vinegar q.b.
  • salt and pepper q.b.

Peel the cucumbers and cut them into thin slices. Clean the carrots, cut them to the julienne and cut the tomatoes in half. In a bowl prepare the dressing with evo oil, apple vinegar and basil. Put in a salad bowl cucumbers, rocket, tomatoes and carrots, olives, add the dressing, a pinch of salt and stir gently. Finally add the tuna or mackerel or goat cheese cut into cubes. Your cucumber salad is ready to be served.
