The tasted almonds of Avola are collected at the end of July, when the hot summer sun has now opened and dried the malli that cover the shells.
The collection is entrusted to the wise hands of our farmers and is carried out with traditional techniques and with the method of glare. The trees are percoxed and the almonds fall on the roofs that are stretched under the trees.
When harvested, they are smallated and put in the sun where they are dried for at least 72 hours. In this period they are controlled and if they are dry completely they are stored in the warehouses waiting for the sgusciatura.
