Ragusani cheese box
They are the oldest cheeses in Ragusa. They have a smooth, thin, compact crust and contains a softer yellow paste. With an intense taste, sweet, slightly spicy, aged at least 3 months, they are very well married with homemade jams, breadcrumbs and a good glass of wine!
Caciocavallo dop ragusano The oldest and most famous cheese of Ragusa, Sicily. It is crafted, with wooden tools. The spinning is made with hot water at 70-80° centigrade. Salt does not exceed 6%. Seasoned at least three months: the more seasoned the spicy note feels on the palate.

It has a pear shape, the crust is thin, compact and contains a softer paste of yellow color. From the sweet, tasty, seasoned taste: it marries well inside a soft sandwich, with seasoned sliced like the Crudo or cooked in a pan with a little polenta!
